Healthy Breakfast Scramble

Olive Oil

Purple Onion



Sweet Potato


In a medium skillet, heat olive oil. Add 3 tbsps. of chopped purple onion, three chopped cooked cauliflower florets, and tomato and cook until tender (about five minutes stirring constantly).

Stir in 3 tbsps. of cooked sweet potato until well mixed.

In a separate bowl add 3 tbsps. of milk to two medium eggs and whisk until well mixed.

Pour egg mixture into vegetables and cook until eggs are well scrambled.

Serves one

Tuna Salad with Spinach and Avocado


Canned Water Packed Tuna

Red Onion

Cherry Tomatoes

Baby Spinach

Poppyseed Salad Dressing

Extra-virgin olive oil

In a medium sized mixing bowl mix together 6 oz. tuna, 1/3 cup avocado diced, 1/3 cup cherry tomato halves, 1.5 tsp. red onion, 1 tbsp. dressing, 1 tbsp. oil.

Serve over a bed of two cups of baby spinach.

Serves one
