Mustard Parmesan Whole Roasted Cauliflower

Cauliflower is a delicious and nutritious superfood
I am making a commitment to myself. I am going to eat healthier in 2022! As such, I am going to share a variety of super healthy recipes. My nutrition research has led me the vegetable we know as cauliflower. Cauliflower is loaded with vitamins, antioxidants and so much more. Cauliflower truly is a superfood.
In a previous post I shared a recipe for Superfood Cauliflower Soup. This soup is so delicious on a cold wintery day. Add a crusty loaf of bread and you have a warm, satisfying and extremely healthy meal.
Today’s recipe is Mustard Parmesan Whole Roasted Cauliflower. Just the sound of it makes my mouth water.
Today, in Ontario we are sitting at minus 7. It is cold, dreary and damp. The perfect day to heat up the oven and bake something tantalizing and delicious like Mustard Parmesan Whole Roasted Cauliflower. I might even pop some dough in my bread maker. Warm, nutritious and satisfying.
I hope you enjoy this easy to make and delicious Mustard Parmesan Whole Roasted Cauliflower.
Ingredients:
Two large heads of cauliflower
1 clove of garlic halved
1/4 cup olive oil
4 tablespoons of Dijon mustard
Salt and pepper
1/2 of a cup of fresh parsley leaves coarsely chopped
1/4 of grated Parmesan cheese
Lemon wedges for serving
Directions:
Preheat oven to 450 degrees
Position an oven rack at the bottom
Line a baking sheet with foil
Remove the leaves
Trim the stem so that it sits flat on the baking sheet
Rub the outside with the cut garlic
In a small bowl whisk together the oil, 1/2 teaspoon salt, a few sprinkles of ground pepper, just 3 tablespoons of mustard.
Place cauliflower on baking sheet and brush the entire outside with the mixture.
Roast for 50 minutes to one hour. The cauliflower should looked charred and the center should be soft.
Let stand for a few minutes
Combine the parsley and Parmesan in a bowl. Brush cauliflower with remaining 1 tablespoon of mustard and sprinkle with the Parmesan mixture.
Cut the baked cauliflower into thick wedges. Serves on plates with a sprinkle of salt, some lemon wedges and any of the extra Parmesan mixture
