Superfood Cauliflower Soup

Ingredients:
2 heads of cauliflower, broken into floret pieces
Olive oil cooking spray
1/4 of a cup of olive oil
1 large onion, finely chopped
4 gloves garlic finely chopped
6 cups of water
Ground black pepper and salt to taste
Directions: Place the florets in a large bowl of very lightly salted water. Let stand for 20 minutes. Drain and arrange on a sheet of heavy aluminum foil on to a baking sheet. Evenly spray olive oil cooking spray across the cauliflower.
Broil cauliflower until browned, 20 to 30 minutes.
Cook the onion in olive oil in a large soup pot until clear, about 5 minutes. Stir in roasted cauliflower and garlic. Add the water, season with salt and pepper and simmer until the vegetables are tender. This should take about 30 minutes. With your immersion hand blender blend the soup until smooth and creamy.
